Adventure Granola Bars

By Josephine Smith, age 15

This delicious, simple, and protein-packed granola bar is great to bring on all your adventures or as a healthy snack.

Ingredients

3 cups rolled oats (use old fashion oats or gluten-free to make bars gluten-free)

¾ cups creamy, natural peanut butter

1/3 maple syrup (you can substitute with honey)

½ cup chocolate chips (use dark chocolate for a healthier option)

2 eggs

Optional add-ins: Walnuts, pecans, chia seeds, pumpkin seeds, dried fruit, sunflower seeds, almonds, and more.

(For an extra protein boost, reduce oats by ½ cup and add ½ cup unflavored, vanilla, or chocolate protein powder.)

Instructions

  1. Preheat oven to 350°F.

  1. Mix all ingredients into a large mixing bowl. Stir well.

  1. Place parchment paper in a 9×9 pan (or just simply grease). Dump mixture into pan and evenly spread. (Sprinkle extra nuts, seeds, chocolate chips, or more over the top now if desired.)

  1. Bake for 14-17 minutes or until the center is baked through.

  1. Let cool.

  1. Once fully cool, cut into desired-sized bars.

  1. Store in bags, ready for your next adventure, or freeze for long-lasting storage.
